Hatcho miso is made by placing soybeans and salt in a wooden barrel, placing many stones on the barrel lid as a weight, and fermenting it over two summers and two winters. Aging and fermenting Hatcho miso over a long period in a natural climate brings out the innate umami of Japanese cuisine, a flavor not found in regular miso. This traditional method is still practiced in Japan only in this region of miso.
