About Products Made Using Traditional Methods: Established by order of Tokugawa Ieyasu in the early Edo period, the Hatcho miso production method has been passed down in Hatcho Town for over 260 years. Hatcho miso is made by placing soybeans and salt in a wooden barrel, placing many stones on the barrel lid as a weight, and fermenting it over two summers and two winters. Aging and fermenting Hatcho miso over a long period in a natural environment brings out the inherent umami of Japanese cuisine, a flavor not found in regular miso. This traditional method is still practiced in this region of Japan, making it the only place in Japan where miso from this region remains.
Maruya Hatcho Miso, an artisanal miso, is aged for a long period of time, resulting in a very dense and firm texture. This reflects the high quality of Hatcho Miso, but because it takes a little longer to dissolve, it’s recommended for more elaborate, authentic Japanese cuisine rather than fast food.
